French Toast with Ham

 This is one of my lazy evening dinner, you can do it for breakfast  or lunch. Who cares?

Ingredients:

  1. Organic Carrot Loaf  bought from Jaya Grocer
  2. Eggs mixture combined with a pinch of salt and 1 tablespoon of sugar
  3. Butter

First, dip the carrot bread into the egg mixure and let it soak. Get the pan ready, melt the butter on the pan on medium heat.

Then transfer the bread to the pan, heating slowly until the bottom is golden brown, turn on the other side and do the same.

Serve the french toast with ham or other ingredients that rocks your mind like chilli sauce, tomato sauce, mustard, fried scallions, smoke salmon roe, or just plain french toast!

All done in less than 30 minutes!

TalkChef Bruschetta

I guess I am not very good with making a quick 5 minute meal or perhaps the person who is lazier than me has a better idea on how to make this simple finger good food. I said this because I charred the first half of the french bread after I got carried away  watching food channel.

My hubby’s face was as black and charred as the charcoal after that. heheheh He said he dont like wasting food so I still put the black bread on his plate. *palm on my face*

This time, with the other half of the french bread left and his supervision – hmm the appetizer turn out not bad!! Even better! 

For your info, he doesn’t know how to cook but he seems to have many ideas when comes to food. I shall say he is a TalkChef! Talk only! In this circumstances I am the executor, sous chef he call it.

This bruschetta was his idea. Toasted French Bread Bruschetta with Garlic butter,  top with Cheese, Salami and mustard.

A Bugger’s Burger

Once upon a time, the bugger want to make burger. Then he bought the meat patty, judging by the price and thickness, ignores branding altogether. Then the meat patty kept in the fridge for 2 weeks or more, almost not seeing light anymore as the bugger does not know where to get the burger bun.

One day, the bugger cannot wait anymore longer, he wants to rock Mrshomely’s kitchen, so he drove to about 5 shops around the neighbourhood in search for the bun, at last  *background music Queen’s: We are the Champion* the bugger decided to turn to Ayamas to check if there’s any bun sold there. Genius!! Its sold there!!

Wonder who supplied the bun to Ayamas?

 

The bugger is actually my husband. Dunwan to refer him as the bugger already la, since he so nice make the burger for me [He doesn't know how to cook and become ambitious to make one so I let him]

Look my Yeobo making burger… of course the wife keep an eye on what he’s doing

Also make some Black Pepper Sauce to coat the meat patty

Warm the bun in the oven

The idea is to wrap the egg omelette with the meat patty. Of course the omelette is done by me and also the wrapping part. Yeobo claim to be too busy doing other thing.

Cooking Rich at home

My first try on Homemade RICH  Kaya (coconut egg custard) .

What do you think?

Boleh tahan ka?

I actually Ter-caramelized the sugar, thats why the outcome of the kaya colour is darker than usual, not that I use gula melaka or what.  I don’t really fancy gula melaka adoi, but my Kaya does taste like one. I tried to reduce the sugar from the original recipe, but it is still too sweet to my liking. Texture wise, its smooth and no clumping Thank God or it’ll go down the drain.

What you need for kaya are:

  1. 2 eggs preferably A size
  2. 1 packet of coconut milk or if you can get fresh coconut milk will be better (1 biji la)
  3. 150gm Sugar (the more you put the longer you can keep the kaya)
  4. Pandan leaves (optional) I didn’t put this

Cooking Rich – How to  (the Right Way )

I am not going to tell you how I caramelized the sugar and make my kaya like dat lor)

Firstly, use a pot fill with less than half full of water and bring to boil, or if you have double boiler better. If not look at the photo above, do something like dat. Crack 2 eggs into a bowl and beat it using a whisk. Pour in sugar, and continue whisking. Put the bowl on top of the pot with the boiling water, reduce the fire to low heat and slowly stir in coconut milk. Keep whisking, if the whisk is too big, then you can change to fork, or whatever that suit you la, as long as you continue stirring it. Do not bring the fire to high heat as it may result in clumping and not smooth lor.

Now you have to stand there like 1 hour or maybe 1.5hours just continue stirring until the mixture thickens. Your RICH Kaya will be ready when the mixture coats the back of whatever that you use to stir. It may appear runny, or watery but its okay because when it cools down it will thickens. If its not as thick as you prefer, put back at the double boiler and stir longer it’ll do the trick.

Its very simple process hope you try it at home!

Mrshomely’s Pizza

Recently got so ambitious about cooking and after the Pizza meal we had at The Olive Restaurant, more research done and all that, I decided to make my own Pizza from scratch! I told hubby I am going to make the dough myself and he sort of freak out.

Even after countless pleads and protest  from Hubby for me to stay away from making my own pizza dough, I still try my luck on the dough he he heh heh aiyo.. I got leftover flour ma and I also bought the yeast lor! Actually I feel so proud, I found instant yeast at Cold Storage .. I didn’t even know I could get it there, Anna told me supermarket can get easily, I always thought I have to go to those bakery supplies shop.

Ah well, lets start looking at how I made the Pizza dough.

Flour, about 500gm. Salt 2 tablespoon.

Yeast 1 packet. you can stir it in the tepid water, or mix it with the dry flour directly. Up to you.

Add brown sugar 1 packet or 1 tablespoon. as usual my sugar FOC de. Can also add directly in the tepid water.

Add tepid water (not boiling hot, but warm). Kacau with a fork until all mix evenly then use your hand to knead the dough abit.

Put some olive oil all over the pot/ big plate and leave the dough to rise for 2 hours. Put olive oil so that the dough didn’t stick on the plate lor.

The pizza dough will rise like 2 times bigger. When its ready, pull a small about of dough like 1 tennis ball size, abit smaller la coz you have to pull and roll the pizza dough. I don’t have rolling pin, so I use my hand only, still you can make the crust very thin, no worry. On how to pull the dough, you can easily view it on youtube, that’s what I did. Wifi and smartphones comes in handy during this time.. kekekekkeke

So after roll out the pizza dough, place it in the pan (whatever it is call that is a good heat conductor will do). This one shown is thick crust. I made 3 thin crust at first then made another 3 thick crust after I am tired and want to abort the pizza making,  not easy lor.. I need a rolling pin next time.

Add the sauce, you can use tomato puree or pasta sauce. Pasta sauce is better coz they got those herbs in it. Be generous with the amount of sauce, coz the pizza will taste better definitely.

Add Cheese!! Cheese! Cheese!

Ingredients prepared, all added with olive oil, some salt and pepper. Any seasoning you can think of also ok. The tomatoes skin removed. Got leftover bacon too.

Put it nicely and evenly..

More cheese cheese cheese.. Mozarella this time

Bake for 25 minutes

Verdict from Hubby and Calvin: Still need improvement on the crust, they prefer the thin crust. Fillings and toppings is good. Need more sauce summo.

Mrshomely: halooo its not easy leh, I tired standing there do the thin crust. Buy me rolling pin next time, I make thin until u cry for more dough.
