Rocket Salad from Bukit Tinggi

Nice or not the salad? I bought a 2 big bunch of Rocket salad from Bukit Tinggi for just RM5, reasonably cheap in my opinion.
To make the vinagrette
In a bowl mix together a tablespoon of red wine vinegar and half a lemon juice. While whisking, slowly add the olive oil about 2 tablespoon.
Mix the salad
Take a big bowl and add the rocket salad, raisins and toasted bacons.

ITS DONE!
Yea.. for a bit of cholesterol I still make one hard boil egg haha

Red Potatoes Salad

Recently have been going to Tropicana City Mall quite frequently for movie and also grocery shopping at Carrefour. Wow, to my surprise Carrefour has improved quite a lot, we found many products that we couldn’t find in the usual Tesco we went, and their fruits and vegetables are really fresh too even cheaper.
Then I saw they having promotion for the red potatoes and they do look fresh so I bought a few. Red potatoes are less starchy compared to Russet, and easier to cook. The red colour is pretty as well and its ideal for a quick salad.
First, cut the red potatoes into wedges, leave the skin on.
Then season the potatoes with olive oil, I use Chilli Olive Oil my boss bought for me from Italy, then some basil, salt and pepper. Mix Well
Bake for 15 minutes or until potatoes are soft. I throw in some leeks and rose scallions to bake too.
Then mix your own salad! Mine has some baked potatoes with leek, mustard chicken, spinach and thinly sliced yellow onions.
Does my salad looks oily? I use olive oil as a dressing, with a squeeze of lemon juice.

Satu Biji Tomato dibiarkan di dalam peti sejuk sejak dua minggu yang lalu. Sebelum ia rosak saya terpaksa memikirkan satu resipi untuk memasaknya. Tetapi saya malas nak masak, tak ada apa-apa yang nak dimasak, tiada ilham.
Sudah ada pengisar baru kat dapur mestilah kena guna, nanti abang marah tak baik lah. Jadi saya buat pes tomato sajalah. Kan Senang? Bunuh dua burung dengan satu batu (kill two birds with one stone).
Pes ni, bukan pes biasa tau? Tak boleh buat pes pasta dengan satu biji tomato je, jadi kena buat sesuatu yang mudah dan boleh disimpan berbulan-bulan ke. Oleh sedemikian saya memutuskan untuk buat pes macam salsa.
Orait la, inilah resipinya. Aku tulis bahasa orang putihlah, nanti ada orang tak paham.
Recipe for Tomato Garlic Sauce.
Firstly, peel and chop 2 cloves of garlic and one tomato. Add Garlic and tomato into the blender, squeeze 1/3 of lemon juice, season with salt and puree. Turn on heat, add 1 teaspoon of olive oil into a pan, add the tomato garlic puree and cook in slow heat for 10 minutes. Let the tomato and garlic puree to cool before transfer to a jar with airtight lid. Keep in the fridge for up to 3 months.Nikmatilah pes tomato ini dengan pelbagai makanan dan pelbagai cara. Saya gunakannya untuk mee sejuk, roti panjang perancis dalam bahasa orang putih baguette, untuk tortilla pun boleh, dimakan bersama sayur mentah yang dipanggil salad tu pun boleh, guna sebagai sos celup ke, makan bersama ubi kentang bakar ke.. idea tak terhingga macam mana nak makan ni.

I have a confession to make!!!
Hubby don’t allow me to buy a bottle of Feta Cheese with Olive one day when we were doing grocery shopping saying that I wont be eating eat like I said I would. However too bad for him, Cold Storage is just within walking distance from my office so I went to get it from there instead without him knowing. I actually hid the bottle of cheese in the fridge knowing he will also not find it! Kekekekkekeke he seldom explore the fridge which is a good thing for me.
For today’s post, to proof to Hubby I had Feta Cheese when he wasn’t around.
First, cut open plastic bag like in the pic.
Pat dry chicken breast and halve it. Put it on top of the plastic bag and season with black pepper and salt
Also season with dry chilli flakes
Then fold the chicken breast and use a rolling pin to roll on the chicken breast meat so that the meat sticks together. This is why I use the plastic bag so that my rolling pin is clean. (I know I shouldn’t be using plastic bag for this as it wasn’t environmental friendly)
Pan fry the Chicken Breast until Golden Brown.
Tadaa!!! Serve with a bed of Salad with Feta Cheese and Olive.
